Detox your Diet: Quinoa a good source of vegetarian protein

Quinoa is a great vegetarian source that is high in protein. Quinoa has the appearance of a grain but it is actually a fruit. It contains more protein than any other grain (an average of 16.2%, compared with 7.5% for rice, 9.9% for millet and 14% for wheat). It is also a good source of dietary fiber and it is high in magnesium, potassium and iron, plus it is a good source of phosphorous, calcium, vitamin E and several B vitamins. Quinoa is a gluten-free grain that is easy to digest.

Quinoa can be purchased at any health food store or grocery store. Ensure you store the quinoa in a glass or plastic container, in a cool, dry, dark cabinet. If stored properly it should stay fresh for up to one year.

Quinoa can be prepared in a rice cooker or in a pot, bring one part quinoa and two parts water or vegetable stock to a boil, cover and reduce heat to a simmer for 15 minutes or until the quinoa are translucent. For a roasted flavor, toast the quinoa in a dry skillet for about five minutes before cooking.
